While I think CoP is a slightly better game than SoC, SoC is simpler and teaches you what you need to know about the series, both story and gameplay-wise, so I recommend playing that first. If you are impatient then just start from CoP, although I doubt you'll enjoy this series if you are too impatient to start from SoC.

Contrary to popular belief, Clear Sky isn't a bad game, but it's not something important for both story and gameplay-wise, so you can just ignore that for now. It's a must-play if you enjoyed both SoC and CoP though. In terms of mods, just play vanilla with unofficial bug patch first. Mod community of this game is great but I doubt you'll enjoy it if you didn't enjoy the vanilla experience of all 3 games.

Some mods breaks the balance of the game too, so just don't. With this in-mind, If you want to play around with mods I recommend installing fan-made standalone game called Call of Chernobyl, which is basically a sandbox for stalker mods.

All 3 games has same "gunplay" and they all plays great. However you'll probably find it bad if you didn't invest your interest and patience to the game, if you are looking for quick and simple gunplay like CS:GO, COD or FarCry 3,4,5 then just don't bother buying this game.
